Brunch just got a whole lot more tropical in Music City. Ruby Sunshine is serving serious vacation energy this summer with a limited-time menu inspired by sunshine, beaches, and fruity cocktails. The menu is available through Aug. 19 and brings pineapple, watermelon, and more to your plate (and glass!). Whether you’re into sweet brunch treats or spiked sips, these seasonal additions were made for leisurely brunches and summer hangs.

Meet the Main Event: Pineapple Upside Down Everything

At the heart of the menu are two craveable takes on a tropical classic:

  • Pineapple Upside Down Cake Beignets – fluffy pillows of dough filled with pineapple cheesecake, topped with whipped cream, fresh fruit, a cherry drizzle, and yes, a cherry on top.
  • Pineapple Upside Down Stuffed French Toast – golden French toast stuffed with that same rich pineapple cheesecake filling and finished with all the decadent toppings.

It’s the kind of indulgent brunch you’ll think about long after the last bite.

Sip into Summer

No beach vacation (or brunch) is complete without a good drink in hand. Ruby’s Summer Sips lineup includes three new thirst-quenching options:

  • Yuzu-Pineapple Margarita – tart, tangy, and rimmed with spicy Tajín.
  • Spiked Watermelon Lemonade – made with vodka and real watermelon.
  • Watermelon Lemonade – a non-alcoholic version that’s just as cool and refreshing.

“This limited-time menu is all about bold, refreshing flavors that truly embody summer,” said Chef Marla Chu, culinary director for Ruby Sunshine. “Pineapple and watermelon are the ultimate warm-weather ingredients — bright, juicy and full of sunshine. We wanted to create dishes and drinks that feel like a mini vacation with every bite.”

Brunch with a Purpose

While you’re indulging in all things summer, Ruby Sunshine is also giving guests the chance to give back. Now through the end of the month, diners can add $1, $3, or $5 to their check in support of No Kid Hungry, a national campaign working to end childhood hunger. Donations will be matched up to $50,000, with every dollar helping provide up to 10 meals for kids in need.

And for Ruby fans who brunch often, don’t forget to download the Ruby Bennies loyalty app to rack up points and unlock rewards with every visit.

Where to Find It

Ruby Sunshine’s summer menu is available now at their Nashville location in Hillsboro Village, but only until Aug. 19. So grab your brunch crew, order something spiked (or sweet), and toast to the taste of summer before it’s gone.
